Quinoa With Beetroot Salad

3 cups Cooked Quinoa

500g Beetroot

250g Apples

1/2 Tbs Raw Sugar

1 Small Onion (chopped finely)

2 Tbs Apple/Wine Vinegar

1 Tsp Mustard

1 Tsp Cinnamon

Salt & Pepper to taste (optional)

 

1. Cook beetroot (unpeeled).

2. Allow beetroot to cool, then peel and dice.

3. Add raw sugar, diced apple, vinegar, cinnamon and mustard to the cooked beetroot.

4. Serve freshly cooked Quinoa with beetroot mix.

5. Add salt and pepper to taste.
