Linseed is a very good source of omega3 fats; our linseed has an oil content of 41.9 % [normal 39%].
As a crop, linseed is a beautiful to see grow, with the flowers waving in the wind. When the seed has been ground it oxidates rapidly so you should consume it straight away. Any ground unused linseed must be kept in the fridge or freezer in a dark airtight container. Another option is to soak it overnight. Linseed can be used in yoghurt, smoothies, salads, cereals and bread and is very diverse in many food dishes.
